Couscous has to be one of my favorite things to cook and eat in the kitchen. It's so satisfying. You start with these tiny grains of pasta and end up with an abundance of fluffy goodness in basically five minutes. It's just a dream come true, really. 

So in this dish, you only need 1 cup of couscous to feed 4 people. Isn't that incredible? The power of couscous combined with protein-packed chickpeas, some fresh veggies you have laying around the house, and warm spices will nourish your family and bring happiness into your home. This plant-based meal is a quick and easy way to serve up dinner without going crazy at the supermarket. Just use what you have!

  • Couscous 1 Cup Couscous Small grains of pasta
  • Chickpeas 15 oz can Chickpeas
  • Red Bell Pepper 1 large diced Red Bell Pepper
  • Zucchini 1 large diced Zucchini
  • Cumin 1 tsp Cumin
  • 1 tsp Turmeric
  • Cinnamon 1/2 tsp Cinnamon
  • Garlic 2 cloves minced Garlic
  • to taste Vegan Sour Cream
  • Cilantro bunch chopped, to taste Cilantro
  • Olive Oil 2 tablespoons Olive Oil
  • Onion 1 chopped finely Onion
  • 1 small, chopped finely Hot pepper
  • 1.5 cups Veggie Broth

  1. Chop all of the fresh ingredients listed to sizes specified

  1. In a large pot, heat the olive oil over medium heat
  2. As soon as the olive oil is nice and warm, add the onions and heat until translucent
  3. Add in the garlic and the rest of the veggies, chickpeas and spices then saute until the veggies are soft
  4. Pour in the veggie broth and turn up the heat until the broth is almost at a boil
  5. Once the broth is almost about to boil, pour in the couscous and put a lid on the pot.
  6. Leave the pot alone for 5 to 10 minutes
  7. Open the pot and fluff up the mixture.
  8. Serve with the chopped up cilantro and vegan sour cream
  9. Enjoy!

*tips and hints* Hints icon

  • Veggies can be subbed out in this recipe fairly easily. Try swapping out the zucchini for carrot or broccoli.
  • Add half a cup of raisins for a sweet kick
  • Add half a cup of nuts for extra protein
